Cherry Crumble Bars

Servings 9 large squares


  • cups all purpose flour
  • 1/2 cup butter melted and cooled
  • 1/2 cup granulated sugar
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup rolled oats to be mixed with topping


  • 2 cups fresh cherries pitted and cut in half
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 2 tsp granulated sugar
  • 1/2 tsp almond extract


Cherry Filling

  • Place the prepared cherries into a medium bowl then add the cornstarch, sugar, lemon juice, and almond extract to the bowl. Toss the cherry mixture together until the fruit is well coated and no cornstarch powder is visual. Set aside until it is time to assemle the squares.

Cherry Crumble Bars

  • Preheat the oven to 375 degrees and line an 8 x 8" square pan with parchment paper. Then grease the bottom and sides of the lined paned with butter to prevent sticking.
  • In a large bowl add the flour, sugar, salt, baking soda, and baking powder then whisk to combine until fully incorporated.
  • Now pour the melted, but cooled butter, into the bowl and use a fork to combine the mixture inot crumbles. It should look like wet sand and have large crumbs visible.
  • Measure out 3/4 cups of the crumble mixture and place into a small separate bowl then set aside.
    This portion is being reserved to mix with rolled oats to created the topping for the squares.
  • Take the remaining crumble mixture and pour it into the bottom of the prepared square pan. Use your hands to firmly press the mxiture into an even layer across the bottom of the pan.
  • Get the bowl with the prepared cherries and pour them over the top of the crust, using a spatula as needed to make an even layer over the top of the pastry.
  • FInally take the bowl that has the 3/4 cup of reserved crumb topping and add 1/3 cup of rolled oats. Use a fork to combine evenly through out the crumb mixture, then sprinkle the mixture evenly over the top of the cherry layer.
  • Place the prepared bars into the preheated oven and bake for 30-35 minutes until just turning golden brown at edges and cherries are softened.
  • Allow to cool completely before slicing and serving.
